The big white truffle (Tuber magnatum Picco) is also called Piedmont truffle, Italian white truffle or Alba white truffle. It is the most valued among truffles, with a price that can reach €7,000/kg. It is more difficult to find than other types of truffles, and its habitat is limited. At the beginning of the last century, it was thought that its habitat was exclusively the Piedmont region in Italy, but by the end of the 20th century it was discovered that it also thrives in the countries of the Balkan Peninsula and their neighboring countries, then southeastern France, and sporadically in Switzerland.
The habitats of the large white truffle in Italy and Croatia are linked to the upper courses of meandering rivers and their flood valleys, and fruiting areas develop from September to December. It creates mycorrhiza with species of the genera Quercus, Populus, Salix, Corylus, Tilia.
